The soundtrack is often the part worth keeping. A song from a performance, dialogue for a transcript, room tone for an edit, or an interview that only exists as a video file. Every one of those wants the audio as a file of its own, and which format depends entirely on what happens next.
That is the difference between this page and the MP3 one, which has already decided. Here the format is yours: WAV or FLAC if the audio is going into an editor and should not lose anything, Opus if it is going on the web and should be small, MP3 if it has to play on something old.
Whichever you pick, the picture is discarded rather than converted, so the work is only as long as the soundtrack. It runs in the tab with no upload, which is the point for anything recorded in a room you were not the only person in.

Questions
Which format should I choose?
WAV or FLAC if the audio is going to be edited — both are lossless. Opus for the web, MP3 for compatibility with older players.
Is the audio re-encoded?
It is decoded and written in the format you chose. Picking a lossless one means nothing is thrown away beyond what the video already had.
Can I extract from a file with several audio tracks?
The primary track is used. Choosing between alternate language tracks is not built yet.
